Do they point at the target and go click click click, or do they let the pistol down, raise it up, do all the breathing sequence, then aim, then click, then follow through, then let the pistol down again?

That's one of the "unnatural" feel that I have for my Morini CM84E. I feel that cocking is part of a sequence of shooting. I feel that one should try to simulate a real firing as much as possible without actually firing a live round.
My Buhag, like all typical Hammerli/Anschutz/Toz/Buchel clones, has set trigger, and set trigger is part of the firing process. You will be surprised how different each pistol's set trigger is. In my case, when I push the set trigger down, I have to also push it a little bit towards the fore-end itself. My Hammerli, meanwhile, is straight down. (But alas, it is still in the shop).

But what do I know, I am still a noob.

Jim's is a very old one, it does not have the "F" mark. Rear sight is not adjustable. Serial number will be below 25000.
