I use a Steyr LG100 in a sport called Field Target. A "shot" is sometimes defined as a dry fire (no pellet is released) which the Steyr does if the breech is not closed (its dryfire mechanism). Is there a way to disable this "feature" so the bolt will not be released unless the breech is closed?

you could eliminate the dry fire mode by filing of the dry fire hump. Or just be sure you push it down all the way, but maybe thats hard to do in the all that FT getup. But the there is no way to elimate the fire mode in anything other than the closed position. It will fire at any point in the bolt travel, just like any other airgun. there is no disconnector in the system like a semi-auto gun, sorry
