I do not think I have seen such table. Plus I expect sometimes it would not be easy to tell which variant of say Walther LP500 it is just by looking at pictures/videos from competitions.

Pardini would be fairly easy. It would be the K12. I would say the top two manufacturers would be Morini and Steyr. Morini or Steyr could be a couple different models. A Pardini most likely the K12, Walter the LP500, FWB the PX8.

Here's how well Steyr's have done at the Olympics:

https://www.steyr-sport.com/en/success/olympic-games

Morini lists other competitions as well;

https://www.morini.ch/results/

Pardini lists lots of Olympic medals, but most of them are for .22 pistols, plus some rifles. Relatively few are from people shooting their air pistols:

Walther, Benelli & Feinwerkbau may have won a few over the years, but the vast majority were won with Steyr's or Morini's.

This list would be interesting. In fact most shooters use Steyr Evo 10/Evo 10E and Morini 162EI/200EI. But I saw shooter who shot qualificaton with Pardini K12 Absorber and finale with Morini 200EI.

Yes it's to bad there isn't such a list anywhere. Not that I could find anyways.
Its mostly fun to see how it's been represented in past few years and why not anyone uses say Feinwerkbau p8x for example.
Might it be sponsorship or is the Steyr just a better pistol in most people's mind.

I would say that Steyr and Morini are best because od their design - look at the Morini 162 from 1992 and Morini 162 (or 200) from nowdays. No revolution, only evolution. The same is possible to say about Steyr LP10 from 1999 and Evo 10 from nowdays. Again no revolution, only evolution. Both pistols have great design with its own philosofy proved by time.

Damir Mikec uses a Walther LP300, not in production anymore, and won gold in the Olympics.

Yes. If he likes LP300 and if he has all necessary spare parts, there is no objective reason why buy new air pistol...

Perhaps it hasn't had time yet to reach the olympic level to a high number, but the P8X is a lot more prolific in europe than it might seem. It's a really excellent pistol that deserves more attention, personally I think a lot of design details on it are a positive innovation, and I hope Steyr took notes (mostly in the grip department).

I held a FWB p8x yesterday and it felt good. Gonna ask the owner if I can try to shoot with it and see how it feels.
The handle was large and felt really good..
