I use the rear sight extensions (actully anti glare tubes) from gehmann. I ordered mine from cibles targets here in Canada. I think it was around $20.00. I agree. There are some guns that definately need bedding because the fit between the barreled action and the stock is not so great. I do not think the FWB 2700 is one of them though.

Wind could be a big part of it. As you mentioned it will be a bit different for everyone but I have mine similar for standing/kneeling (about 1/4" longer for standing) and then about 3/4" inch out further for prone.

Yes! That is actually really good without jackets and pants. I average about 8's if I am lucky without any gear. With full gear I shoot around 570/600 so great definately does help!

The 1807 incorparates a 54 action does it not? If so you allready have a pretty solid base (barreled action) so it could be an option just to replace the stock. From my experiences, no it does not. It may require a click either way - but you are likely going to be doing that any way on any given day to compensate for your position, and other factors like wind, etc.

Only reason I can maybe think of is that the bolt sticks up so high making it hard to close the gun case and maybe hard on the gun? But having said that I just keep it in the gun with the trigger compressed.
