I find myself comfortably keeping both eyes fixed on my target while
using an my optic.
Fundamentally speaking, why shouldnt I use both eyes?

Personally I like keeping both eyes open...much more relaxed than trying to squint one shut.

I find it very easy with a no-magnification reddot to shoot with both eyes open. With iron sights I need to use a blinder.

You should always shoot with both eyes open.
If you have trouble focusing put a blinder to block vision from your non-shooting eye.
Your non-shooting eye needs light to keep your pupil properly dialated so you get the best image of your sights.
