Have done some searching here and internet, on Bicycle Biathlon.
Finding that it exists out there in the world, but not that much information on it.
I have a few possibilities, Air rifle with, as of now 2, maybe 3 ranges on a 7 mile gravel road loop.
Possibly with permission, a very large Mt bike course with many Air rifle ranges possible.
One range, up to 200 yard smallbore and/or centerfire range , which can be combined with the others.
Anyone doing centerfire biathlon at 200 yards? In any manner, ski, bike, run, snow shoe, etc?
Fat tire bikes with studded snow tires.
Would be fun to try with centerfire in a historical sense.

Cascade Shooting Facilities in Western Washington does host a spring/summer biathlon series through September, which includes bicycle and running biathlon. Unfortunately, I can't find any contact information on the club's biathlon page.

Perhaps an email to
info@wabiathlon.org could better field your interest inquiries?
Although vague, I hope this may have been of help.
Enjoy,

I feel like there used to be more bike and shoot races but today there has been a pivot to more roller ski and shoot summer races to develop youth for the Olympic sport.
Many locations that shoot 22's and understand winter biathlon will have 10 meter air rifle targets for Para Biathlon - so there is some hope.
I've never seen an event where people bring their rifle on their bike to have multiple ranges on a loop. It's just not comfortable even if it could be made safe. Every race I've done I left my rifle on a rack or mat and did multiple loops and came back to it. Often only elites roller ski with their rifles. Just not worth the risk to a $3,000+ rifle.
Some options:
West Yellowstone MT at the Rendezvous Trails has a Mountain Bike Biathlon or two every summer - but use .22's.
Washington Biathlon Club as mentioned has summer races. They are often running focused.
Soldier Hollow in Utah has some summer races - but they are roller ski focused and use .22's.
Back east your best bet is:

New York also has options:

I'm not aware of any current point to point center fire bike biathlons that throw back to the origin of the sport with Military Patrol. The closest are some of the 3 gun competitions out west - but it's all run and gun.
