legal AP grip

who are the judges that determines whether or not your AP pistol grip pass inspection during a match such as the nationals? Are they volunteers? Also, are they strict on some aspect and relax on others, does it vary from person to person?

I obviously cannot talk about the US but here in the UK equipment control for all major matches is always staffed by qualified volunteers.
As far as I am concerned the pistol specification rules are applied to the letter, what is the point of doing otherwise. The rules, especially since the issue of the new rule 8.17.0 drawings with the 2nd edition of the 2005 rules, are quite clear. The only arguable aspects should be when variances are smaller than the tolerance of the measuring devices.

at any major match you usually get your equipment checked prior to any official shooting. this is where match officials look at the various articles to include guns to see if they are legal for use in competition. this is where grips will be looked at. i hope that is what you meant...

It is the shooters responsibility to ensure that the equipment meets the rules. Even if you go through equipment check and they pass your gun another official can check your equipment or a competitor can file a challenge and if you have already shot with the gun and it is found to not meet any of the criteria you will be disqualified. So if you not meeting the rules you'll be taking your chances.

While we're talking legal AP grips:
How far back toward the wrist can the part of the grip that is directly below the rear sight (and on top of the hand) extend and still be in contact with the hand?
I make the assumption that it can touch the hand and extend back as far as is possible as long as it does not touch the wrist.
Is this correct?
Is there any fine print about this extensions shape/profile?

Yes, you're correct. For Air Pistol there is no limit on that dimension providing it is clear of the wrist. For 25m pistols the maximun is 30mm.
You need to look at rules 8.16.0 and 8.17.0. The first is the table of pistol dimensions and the second is a set of drawings describing grip shapes etc.
