Currently I am using just a t-shirt and hoodie under neath of my shooting coat and am looking at gettting something to wear instead.
Am wondering:
What would be the advantages of wearing something like under armor instead of a T-shirt? Would it be allright to wear under armor and then a hoodie overtop or would that be defeating the purpose?
What advantages do the clothing such as moche or other pieces of clothing meant for shooting purpusoes have over something like under armor? Are they worth the money?

Specialist under wear such as a T shirt to be worn under the shooting jacket is quite important. They are designed to wick away the sweat and evaporate it on the outside of the shirt. These shooting sweaters are not cheap but do really work. Check out the 'Coldwinner' by Anschutz, Mouche, Sauer, Kurt Thune and Monard. They are also manufactured to have their stitching seams in places that won't affect you or cause irrtation under your jacket where there are pressure points.
Most of these manufactures make a summer and winter garment but the Coldwinner does both hot and cold climate in one shirt.

I wear the under armour as well as a sweatshirt under my jacket. I use the under armour for primarily two reasons.
The first was mentioned before, to wick up the sweat, it cools you quite well.
The second is primarily to help improve the comfort of my legs. The canvas of the shooting pants can be kind of uncomfortable in standing and especially in kneeling. The extra layer prevents alot of that discomfort.
