How much do those shooting jackets and pants weigh?

A modern shooting jacket is heavier than a suit jacket, although some are lighter than others (my canvas/leather Monard is lighter than my canvas/synthetic/leather Anschutz), but it's not like body armour. If anything mediaeval armour was designed to allow more movement than a shooting suit.

Way back 'in da day' when light international jackets were first mandated, you could ball one up and stuff it in the corner of your kit bag. I have one of the current and very popular Capapie suits. There is no balling it up and stuffing it anywhere. 2 years on of being used at least once a week and it is still quite stiff. You could easily use the pants to beat someone. (although I don't recommend that)
While the major impediment to motion is the stiffness, these modern suits are still quite heavy. I would characterize the fabric on the Capapie as canvas that has been sprayed with a plastic that dries to a stiff shell (hence some folks calling these modern suits 'exoskeletons') they are quite heavy. Plopped the carry bag for my suit on a rifle scale at equipment control, 7.8kg (17.2 lbs) with the bag.
